Traditional and original desserts debut at The Food Gallery

 

(Hong Kong, 5 July 2016) – The Langham, Hong Kong is pleased to announce the appointment of Matthieu Godard as the hotel’s new executive pastry chef.

 

The French native will oversee the pastry department in all western restaurants, including Palm Court, Bostonian Seafood and Grill, Main St. Deli, The Food Gallery and Artesian bar, along with the hotel’s catering operation and in-room dining.

 

Previously the head pastry chef of two Michelin-star Amber at The Landmark Mandarin Oriental, Hong Kong, Godard has also led the confectionary kitchens of Hong Kong’s boutique bakery Petite Amanda and the French fine dining Sens and Bund restaurant in Shanghai, China.

 

With 17 years of culinary experience, Godard’s passion for pastry began at a young age where his talents earned him to be the demi-chef de partie at two Michelin-star Château Cordeillan-Bages in Pauillac, France. Working directly with acclaimed French Chef Thierry Marx, his apprenticeship allowed him to refine his technique and expand the range of his craft with different ingredients.

Godard debuts his first appearance with a buffet of delicate desserts at the hotel’s all-day dining restaurant called The Food Gallery. From traditional to original recipes, guests can expect a deliciously sweet journey of nearly 20 different treats that will alternate daily for lunch and dinner.

 

Featured French classics include the iconic Paris-Brest made of a crispy choux pastry crust filled with a praline cream and topped with powdered sugar and toasted almonds, as well as a house-made Soufflé of the Day.

 

For summer, Godard incorporates seasonal fruits to bring out the true flavours of his creations. His Lemon Meringue Tarts have a refreshing tangy lime zest, while the Apricot Pistachio Mousse exudes a colourful sweetness.

 

His assortment of unsweetened jelly shooters are also made from fresh produce. Substituting gelatine for algae to create its form, the texture becomes lighter and is vegetarian-friendly. The different flavours range from Mango Pineapple, Mint Apple and Strawberry Rhubarb Jelly, all sugar-free and only sweetened by the natural fruit sugars.

Alongside the confectionary corner, The Food Gallery offers an extensive spread of international seafood; including oysters and lobsters, as well as green salads, appetisers, and an interactive carving and grill station for the eyes and palate.

 

Buffet enthusiasts can enjoy a sweet and savoury spread at The Food Gallery where lunch is priced from HK$268 per adult, and dinner is priced from HK$548 per adult, subject to 10 per cent service charge.
