Honouring Le French GourMay 2016, Three Michelin Star T’ang Court at The Langham, Hong Kong Explores Alsace’s Affinity to Cantonese Cuisine

T’ang Court dedicates a menu to match divine Alsatian wines

 

Participating in the 8th edition of Le French GourMay, The Langham, Hong Kong’s Three Michelin Star T’ang Court restaurant celebrates the French food and wine festival by presenting a dining experience to delight every gourmand. T’ang Court devotes a Cantonese tasting menu, paired with specially selected Alsace wines, throughout the month of May.

 

Appointed as the theme region of the festival this year, Alsace borders France and Germany and is well-known for its cross-culture, and an exceptional setting for making wine. Protected by the Vosges Mountains, this picturesque region is singularly blessed with enviable conditions – range of soil structures, noble variety of grapes and an extraordinary climate – one of the driest in France. Thirteen distinct terroirs and the cross-border hybridization make Alsace a mosaic unlike anywhere else.

 

A selection of the finest Alsace wines with specific “minerality” tasting traits will be paired with T’ang Court’s Executive Chef – Chinese Cuisine Kwong Wai Keung’s eight-course set menu. Guests will be able to choose different Rieslings that are dry, and carry subtle fruity and floral notes, which harmonise marvellously with the serving of shellfish and seafood. Those who appreciate rich and rounded Pinot Gris will also be offered a few options that go well with fish. And finally, the Gewurztraminer presents fine characteristics of an expressive bouquet, fresh and aromatic, that pairs perfectly with rich proteins and the sweet dessert course.

 

The eight-course culinary journey features a range of T’ang Court’s legendary Cantonese dishes, designed to complement the Alsace wines. Guests will begin with an assortment of signature appetisers such as Smoked Sliced Cod Fish with Honey Syrup, Cantonese-style Barbecue Pork and Stir-fried Japanese Wagyu Beef with Spring Onion. Other hero dishes include the locally-sourced Baked Sliced Fresh Lobster with Mozzarella Cheese and a house-made Golden-fried Stuffed Bean Curd with Egg, Spinach and Morel Mushrooms in a Chicken Broth. Finish off with a traditional Sweetened Almond Cream with Egg White that is blended in a specific way to create a fragrant, creamy texture.

 

T’ang Court’s exclusive Alsace wine tasting menu is available from 1 to 31 May 2016 for lunch and dinner. For food only, the menu is priced at HK$850 per person, subject to 10% service charge, with an additional charge for any wine pairing.
