Using only ingredients of the highest quality, Palm Court debuts a decadent assortment of Valrhona Chocolate Éclairs. Executive Chef Pedro Samper creates a range of enticing éclairs made from Valrhona’s white, milk and dark chocolate collection, as well as infusing different fruity flavours that complement best with each cocoa foundation. Yuzu, Jasmine Tea and Coconut with Valrhona Ivoire 35% White Chocolate (smooth with a hint of Vanilla)
Amaretto Liqueur and Hazelnut Praline with Valrhona Jivara 40% Milk Chocolate (creamy and mild)
Tangerine, Kumquat and Orange Blossom with Valrhona Bahibe 46% Milk Chocolate (intense and sweet single origin Dominican Republic cocoa beans)
Raspberry and Rose Water with Valrhona Manjari 64% Dark Chocolate (tangy and single origin Madagascar cocoa beans)

The exclusive Valrhona chocolate éclairs are available to enjoy in the lounge or for takeaway from 21 March until 30 June 2016 and priced at HK$36 each, plus 10% service charge.
Hop in to The Bostonian and celebrate spring with an Easter Brunch feast. The semi-buffet brunch features an appetising selection of starters, salads and seafood that include baked and freshly shucked oysters, Boston lobster, Canadian crab claws, and soy glazed baby abalone. Move on to the carving trolley that carries Mediterranean-style Roasted Lamb Racks with Rosemary and Thyme, and tuck in to an assortment of hot dishes such as Pan-seared Rougie Foie Gras with Black Truffle Jam and Red Snapper on a bed of Petit Pois and Chanterelle Risotto with Champagne Foam. Easter wouldn’t be complete without something sweet which is why a confectionary corner will be available, along with a cupcake decorating area. Children and adults can enjoy a medley of different flavours and toppings to create original sweet treats.
Available on 27 March 2016 from 11:00 a.m. – 2:30 p.m., Easter brunch is priced at HK$598 per adult and HK$368 per child, subject to a 10% service charge.
Main St. Deli
Inspired by the best-selling and critically acclaimed children's book, Main St. Deli presents Green Eggs and Ham by Dr. Seuss. Menu staples include Organic Fried U.S. Eggs, Pan-friend Ham, Herb Roasted Potatoes, Sautéed Spinach, Cherry Tomatoes and a choice of Cured English Back Bacon, Roasted Organic Cajun Chicken Breast or Charcoal-grilled U.S. Beef Striploin. Attributing to the green theme will be a house-made salsa verde sauce made from tomatoes, jalapeños and coriander. Continuing the colour scheme, guests can quench their thirst with a Green Tea Milkshake topped with a mountain of whip cream and a chocolate egg. Children will also be given a Main St. Deli specially made Dr. Seuss colouring page to draw on.
The Green Eggs and Ham dish starts from HK$168, while each Green Tea Milkshake is HK$60, both are subject to a 10% service charge and available from 25 to 28 March 2016.
